Opal Moon Bistro is the brainchild of Roger Roessler, a seasoned restaurateur and wine connoisseur with an illustrious career in the food and wine industry. Having previously owned over 20 restaurants in the United States and established Roessler Cellars Winery in Sonoma, California, Roger sought a quieter, more peaceful life after the global COVID-19 pandemic. His vision for Opal Moon was to blend global culinary influences with the rich cultural heritage of Hoi An, creating a truly distinctive dining experience.

Unfortunately, Roger’s health has since declined, and he is now under care. Despite this, his legacy endures, as the local team, led by Chef Khoi Nguyen and Manager Ai Vy Nguyen, passionately carries forward his vision.
